Fluffy Pancakes

I know the photo doesn't say fluffy but you just have to take my word for it.  Be mature and learn to look past the grotesque appearance.  Search for the inner beauty, so they say.  Enough of the rationalization, let me just say that homemade pancakes taste so much better than boxed pancake mixes.  There is no aftertaste and you are sure of what goes into the batter.   I have yet to perfect the shape and appearance but I will get there.  Maybe some day I'll get pancake rings to make the picture-perfect pancake.  But for now, this will do.  This is just the basic pancake.  While simple is yummy, you can also sprinkle some cheese, crumbled cream cheese or chocolate chips onto the batter (while one side is browning in the pan).  Up to you.  You are only limited by your imagination.  I encourage you to try this at home.  Who wouldn't love waking up to the smell of fresh pancakes, anyway?

Easy-do-it Pancakes:  
Dry Ingredients: 1 cup flour; 2 teaspoons baking powder; 1/4 teaspoon salt; 2 tablespoons white sugar.
Wet Ingredients: 1 large egg; 1 cup milk; 2 tablespoons melted butter

Combine dry and wet ingredients separately then add the wet to the dry ingredients all at once and stir just to combine.  Be careful not to overmix or the  pancakes will be tough.  Leave the small lumps alone, they have every right to be there.  Brush the pan with a small amount of butter and pour batter into the pan.   Turn the pancake over when the bottom of the pancake is brown and little bubbles start appearing on top.  Cook the other side until brown.  [Recipe from Joy of Baking]


There you go, another easy meal from Tetetmum. Another one of Naddy's heaven food. I think Tetetmum is becoming synonymous to easy.   Spell "Tetetmum", "E-A-S-Y", lol.

The photo on the right is my plate.  Pancakes the way I wanted it for the day: slathered with butter then drizzled with salted caramel syrup and a little maple syrup.  By the way, the recipe serves two hungry stomachs.  Serve it with coffee, OJ or hot chocolate.  Enjoy!
