Who doesn't want freshly made waffles? Well not me. Who likes fresh hot waffles with everything dreams are made of? I do! I was able to convince the boss to get a waffle maker and we got a 3-in-1 panini-waffle-grill. So we tried the basic banana-caramel-whipped cream waffle one weekend. The boys loved it. So we upped the waffle challenge one notch higher by adding nutella. Banana-nutella-caramel-whipped cream waffles! Oh boy! Oh boy! It looks ugly but let me assure you that you'll consider this ugly mess a treasure after the first bite.
¾ cup all-purpose flour
¼ cup cornstarch
½ tsp. baking powder
¼ tsp. baking soda
½ tsp. salt
1½ tsp. sugar
½ cup whole milk
½ cup buttermilk
1/3 cup vegetable oil
1 large egg, lightly beaten
¾ tsp. vanilla extract
¼ cup cornstarch
½ tsp. baking powder
¼ tsp. baking soda
½ tsp. salt
1½ tsp. sugar
½ cup whole milk
½ cup buttermilk
1/3 cup vegetable oil
1 large egg, lightly beaten
¾ tsp. vanilla extract
Directions:
In a medium mixing bowl, combine the flour, cornstarch, baking powder, baking soda, salt and sugar. Whisk together to blend. In another mixing bowl, beat together the whole milk, buttermilk, oil, egg and vanilla. Add the dry ingredients to the bowl with the wet ingredients and whisk just until incorporated and few lumps remain. Set aside to rest for 30 minutes.
Preheat a waffle iron. Fill waffle wells and cook according to the manufacturer’s instructions. Cook until crisp and golden. Serve immediately.
If you don't have a waffle maker, try the toppings with pancakes. I don't guarantee the same satisfaction because they have different textures. If you don't want to try it with pancakes, go ahead and try the banana-nutella-caramel-whipped cream combo on its own. Bliss! Wait, this post is supposed to be about waffles. Sorry, I got carried away. Happy weekend!
